About Swiss cheese fondue

Cheese fondue is one of the most popular traditional dishes associated with Switzerland, especially in the French-speaking regions.

The best-known Swiss style is the Fribourg “moitié-moitié” (half and half), a smooth blend of Gruyère and Vacherin Fribourgeois. In Valais, local raclette cheese is often used, sometimes blended with Vacherin Fribourgeois or other regional cheeses.

To eat a fondue, small pieces of bread are skewered onto a fondue fork and dipped into the melted cheese. Classic accompaniments include gherkins, pickled onions and usually white wine, or even a shot of kirsch.

There are many variations, such as adding mushrooms or spices. A popular variant is cheese fondue with tomato (“fondue tomate”), where bread is replaced by raclette potatoes and the fondue is ladled onto the plate.
