About Swiss Cheese Fondue
Cheese fondue is one of the most iconic traditional dishes of Switzerland, particularly in the French-speaking regions.
The most famous Swiss style is the Fribourg "Moitié-Moitié" fondue, a creamy blend of Gruyère and Vacherin Fribourgeois. In Valais, we often use the region's Raclette cheese, sometimes blended with Vacherin Fribourgeois or other alpine cheeses.
To enjoy a fondue, small pieces of bread are speared on a fondue fork and dipped into the melted cheese. Classic accompaniments include pickles, pearl onions, and usually white wine, or even a small shot of Kirsch.
There are many variations, for example with mushrooms or spices. A popular version is the tomato fondue, where bread is replaced by raclette potatoes and the fondue is served on a plate.
